I stumbled across the recipe on Facebook, tried it and I swear it's better than some of the masak lemak cili api I had in restaurants! And it's super simple too!
Ingredients
- 15-20 bird's eye chilli (cili padi)
- 2 lemongrass
- 1 inch of turmeric (kunyit hidup)
- 6-8 pieces of chicken
- Tumeric Leaf (daun kunyit)
- Coconut milk
- Tamarind slice (asam keping)
Steps
- Blend the chillies and turmeric.
- Put the chicken in a pot with the lemongrass
- Add in the blended chillies and turmeric, keep the heat low
- Keep stirring the chicken to avoid it being burnt
- Cook until the chicken is halfway done
- Add in coconut milk (I use 1 small box of KARA coconut milk)
- Shred few turmeric leaves and add it in
- Add water to your desire (whether you want it to be soupy or thick broth)
- Keep the heat low. Add in tamarind slice
- Add salt to taste and wait until the chicken is cooked all the way through.
