Recipe : Chocolate Chip Cookie (Super Easy and Tasty!)

I got the recipe from a baker's FB (Azlina Ina) and I kid you not, it tasted soo good! And easy to make, too.

It's super easy because you only need a large bowl and a wooden spoon (senduk nasi also works fine) to mix the ingredients before baking them. 

Ingredients
  • 500g of Tatura salted butter
  • 2 cups of brown sugar
  • A dash of vanilla essence / creamy vanilla flavour
  • 2 grade A eggs (room temperature)
  • 1/2 cup of Naturel sunflower oil
  • 5 tb hazelnut paste / Nutella
  • 4 tb cocoa powder
  • 1 cup of corn starch
  • 1 tb emplex OR 2 tb rice flour
  • 1 tb baking powder
  • 1/2 tb baking soda
  • 1/2 tb cream of tartar
  • 2 cups of Nestum (from the bakery, not the 3-in-1 version)
  • 5 cups of wheat flour
  • 2 cups of chocolate chips
  • 2 cups of baked almond nips

Steps
  • Add in all the listed ingredients [in that order] and make sure they are well mixed.
  • Cover the bowl with plastic wrap and keep it in the fridge for at least 1 hour (it can be kept for up to 5 days in the chiller).
  • Take it out when you are ready to bake. Leave it to room temperature.
  • Transfer the dough into the piping bag, snip the end (not too big)
  • Pipe the dough onto the baking tray (bite sizes, 20 cents coints) It will expand! make sure to leave enough room between the cookies.
We piped too big and this happened 😂
  • Bake it at 170 C, for 25-30 minutes.
Then, we learn from our mistake 😌

The baker also gave some tips.
For the measurement, she used a plastic cup. If you were to use the metric measurement, the cookies will not be as good.

Immediately when you take the tray out of the oven, it will still be soft. Let it cool, and it's crunchy!

Honestly, me and N could not stop munching on these!!

Recipe : Fried Kuey Tiaw

More than anything, the recipe I shared here is meant for my reference.
So you'll see such trivial recipe as this but since it's soooo good, I'll keep a record of it here.

Ingredients

  • A packet of Kuey Tiaw (500g)
  • 2 tb Soy sauce
  • 2 tb Dark sauce
  • 2 tb Sweet sauce
  • Bird's eye chilli
  • Garlic
  • Prawn
  • 2 eggs
  • Bean sprout
  • Chives

Steps
  1. After spreading apart each strand of kuey tiaw, in a bowl add the soy sauce, dark sauce and sweet sauce. Make sure they evenly coat the kuey tiaw. 
  2. Pound some chillies and garlic.
  3. In a wok, stir fry the chilli and garlic paste until it's fragrant.
  4. Add the prawn, let it cooked halfway through.
  5. Add the eggs and scrambled them.
  6. Next, add the kuey tiaw, bean sprout and chives on high heat. 
  7. Mix them well, and they're ready!

#Pregnancy : 1st Trimester Experience

First Trimester: 29 Dec 2019 - 26 March 2020

Alhamdulillah, my first trimester went like a breeze 😂 So merciful Allah is. We were quite worried initially as I had to juggle working at a new place and studying for my final semester. Plus, my mom had very horrible pregnancy experiences and people said it's genetic. Well, thank God it's not!

With the outbreak of COVID-19, I also got the chance to rest at home. Alhamdulillah, a silver lining for me. I noticed that I was tired a lot, especially in the evening. I'll fall asleep as early as 9pm and sometimes still woke up tired. Other symptoms include feeling bloated, acne and mood swings. Alhamdulillah, I don't experience any morning sickness or vomiting at all. 

So, how are things different for me now?

I quit my workout session completely, for the time being. I gave up netball 💔[all these before MCO], I had to stop using some of my favourite skincare products (separate post on that soon), I left office on time (which was rarely the case before) because I'm super tired but the one which impacted me the most was I had to stop ALL my lower back treatment. All of them! No more physiotherapy and I can't even use the Acustop patch on my back (which I use almost every day to alleviate my back pain from the slipped disc I had). But, I got myself a personal masseuse, thank you N for your help every single night 😂 

Oh and I tend to crave sweet things now 😋
By the end of my first trimester, I had not gained any significant weight although I ate as usual. Yeayy!
